Production Technology

Today the main activities of the company are milk processing and dairy products manufacturing.

Annual capacity of OJSC “Pruzhany Milk Mill”: rennet cheese – 7,000 tons per year, butter – 1,400 tons per year, skimmed milk powder – 1,000 tons per year, dry cheese whey – 2,400 tons per year. Production of semi-hard cheeses is 70.9 % (in total), butter – 15.9 %, skimmed milk powder – 5.6 %, dry cheese whey – 6.7 %, other products – 0.9 %.

Of course, to be successful we have to go with the times, i.e. to introduce modern technologies. The enterprise is constantly upgrading production facilities. For example, in 2009 the reconstruction of cheese-making shop was completed, it was put in commission with contemporary equipment - automatic line for rennet cheese making. The aim of the reconstruction was not only to increase the processed milk volume, but also to improve processing methods. Production modernization, technique and modern technologies introduction also had the aim of technological capabilities enhancement, which would give the opportunity to produce cheeses of different species groups. This line is equipped with specialized machines from leading European manufacturers, such as “Bertsch-Laska”, “Alfa Laval”, “Westfalia”, “Cryovac”. The reconstruction allowed the enterprise to raise the cheeses production at higher level of quality, to expand the range of produced products both in taste characteristics and appearance, cheeses form. At the same time the mill specialists have developed a new creative design of packaging that attracts the attention of the buyer. Cheese specific features are gained only after a long ripening process in cheese rooms, where special conditions for the accumulation of flavoring and aromatic substances are created, especially because the enterprise has already commissioned cheese ripening and storage rooms, which allow holding the process of product ripening and storage at highly technological level.

Cheese still cannot claim to be the only product of OJSC “Pruzhany Milk Mill”. An important focus of the enterprise is the production of dry products: skimmed milk powder and dry cheese whey. In 2007 the reconstruction of the skim milk drying section was made. The equipment installation has allowed to increase raw material processing volume, to improve significantly consumer properties and quality of the finished product.

Also cheese whey obtained from hard cheese production is processed on this equipment. To improve the qualitative features of the final product – dry cheese whey, feedstock preparation process will be upgraded. The mill has established the production line with nanofiltration unit with pre-concentration, partial demineralization, followed by crystallization of cheese whey lactose.

Produced dry cheese whey with the new technology of processing increased the quality indicators in microbiology, physicochemical parameters, organoleptic characteristics. With the use of this new technology it is possible to avoid lumping and caking during long storage process. These factors contribute to the growth in the product sales, as well as to the expansion of sale markets.

Ancillary shops:

  • water intake structures, deferrizing station. Water is supplied from two artesian wells of 195.233 meters depth, and then the water is cleaned at the deferrizing station and is moved to the operational and support areas of the enterprise. So, the water used for industrial purposes corresponds to the quality of drinking water. Also there is accredited laboratory of water and sewage system, which means a constant and complete quality control of the water used for production purposes.
  • sewage treatment works, commissioned in 1998. In 2012 the reconstruction of local sewage treatment works is planned. Contemporary equipment with the capacity of 2,400 m3 of flows per day is going to be installed.
  • boiler room, power 18 g/cal (= 30 tons of steam per hour). Operating pressure – 1 MP. Three boiler units ДЕ10/24 are mounted.
  • compressor room. The compressor room reconstruction was made in 2009 with the transfer to freon, power 1.5 mW of icy water and 0.75 mW of chambers cooling with load regulation from 0 to 100%. It’s enough to provide production shops with cold.

The enterprise is equipped with sufficient engineering maintenance (electricity, steam, water, cold, sewage treatment works), as well as production facilities for the manufacturing of cheese, butter, dry milk, dry whey.
